It sounds like you have the mouse click as your default inventory key. Go into the Options menu and under Controls remap the inventory key and it should work.
If a menu item has 3 dots after it, known as an ellipsis, clicking on it will open a dialog box.

When in-game, press escape.
Windows XP: Open the start menu, click "Run" then type %appdata%. It will open a folder with Roaming in it. Open that, and then click on the .minecraft file. Windows 7: Open the start menu, and then type %appdata% in the search bar. It will open a folder with Roaming in it. Open that, and then click on the .minecraft file.
Double-clicking a mouse selects an item and executes the default action, usually "open".

Move the mouse pointer until it rests on the start icon at the bottom left corner of the screen, and click it with the left mouse button. The start menu will open up. There are small arrows next to several items in the main menu. These arrows indicates that a sub-menu exists. Place your pointer on Programs to open up the Programs sub-menu. The double arrow at the bottom of the programs sub-menu indicate that some programs in the menu are not presently displayed on the screen. Click on the double arrow so that all the programs are shown. Some items in the programs menu, such as Accessories, have sub-menus on their own. You can choose an item in the menu by single clicking on it.
You can click on it with the mouse. You can press the F10 key or the Alt to activate the menu, and then hit the underlined letter in the menu heading to open it. So hitting Alt or F10 and then F will open the File menu. Hitting Alt or F10 and then O will open the Format menu.
You just press 'T' to open up the chat menu.
You can't... unless you use a trackpad. You need a mouse to direct the cross to where you want to punch, open doors etc.
If you open the menu, then click on GUI scale, it will adjust the size of you inventory
