It's very hard to get hold of one, although if you look around on different websites they are putting a few potable gamecubes up for sale on online auctions such as ebay.(this is quite rare). You will definetley not find one in game stores,but there are also online workshops on how to make one.
There is no retail portable GameCube. The portable GameCube consoles that you see are fan-made, and thus, aren't for sale.

Yes there are portable screens available for the Gamecube. However these screens are all third party accessories as Nintendo never released an official version.

Sadly there aren't any books that I know about making a GameCube portable, but there is untapped potential on the Internet. Certain sites teach how to use device such as the GameCube in a vehicle using an inverter and a small TV that you can buy for cars (granted it will need a RGB connection). Advanced "hackers" of technology, can tear apart a game system and make it low-profile, around the size of a netbook complete with wireless controllers.
Ebay absolutely has GameCube accessories. You can't really get them easily from other sources because the GameCube didn't have huge sales numbers and is no long produced.
