You cannot, Jinpachi is only an extra character for the story that you can only fight in story mode. You can't, Jinpachi is a extra character in Tekken 5 that you can only fight, not use so you can't use or get Jinpachi just fight him. Although i get why you want himjinpachi is onley playable with action replay (also to dodge hes fireball attacks yoshimitsu press down x o to sit and let go Yoshi will start healing himself while dodge the fire ball move)
