Typically the average is considered 3 days.
This can be remembered by the rule of 3's:
3 minutes without air
3 days without water
3 weeks without food
There have been extreme cases going beyond this, and of course someone not in a healthy condition will not even last this long, but these are considered the typical average for a healthy adult
It should also be noted that just because you can survive this long, does not mean that you should. The body may begin sustaining damage long before death has been reached in the case of starvation or dehydration.
