Try using pea stone (small, round, multi-coloured pebbles). It looks pretty good. Install garden edging around the circumference of the pool about 2 feet out from the pool wall. Lay landscape cloth down to prevent weed growth, and spread the pea stone around. If you install the edging close enough to the ground, you can run a lawnmower right beside it and won't need to worry about using a trimmer. I've also seen a small brick wall run around the pool instead of garden edging.
