Likely you have an issue with the jet- over time, the pressure or any chemical starts to dissolve the jet- high quality spray guns such as from KREBS feature an embedded industrial ruby in the jet so this wear doesn't happen.
The other possible issue is that if this is a cheap gun, the bore and piston may be cheaply engineered thus not moving evenly. If a Wagner or KREBS gun, use the maintenence screw to investigate whether there is a smooth movement without too much play.
