A gas block acta as an intermediary channel for the gas trapped behind the bullet (when the rifle is fired) to exit the hole in the barrel and be directed up, then back into the rifle. This powers the reloading mechanism of the rifle.
There's probably a more technical answer for it, but at it's basic, that is what a gas block does.
