I think the operative word here is "sword" so looking at noted knife makers may not be a good lead. Knife and sword making and markets have common elements but are different. The first thing would be to determine what kind of sword you are interested in? For example, I like Japanese sword both antique and new. You need to either develop a direct relationship with the smith which is often hard to do or work with someone who has this experience. I use Japanese swords. Sometimes they refer me to other folks in the business when my request is outside their specialty.

Swords are intentionally designed to have at least some flexibility so that the sword can spring back from sudden impacts, which is where a Bismuth sword would catastrophically fail.
