The base structure was timber, walls were typically plaster lath. These were not so long ago that they are much different from houses built today. The biggest difference would be that today, most materials are mass manufactured and very much standardized (sheetrock/drywall, 2X4 lumber, etc.) and of course, there are tools and materials that were not part of many houses back then (nail guns, electric saws and drills, insulation, double-pane windows, showers, microwave ovens, electricity, gas furnaces and central heating and cooling).

Icecream was not commecially available in Victorian times - there were no such things as freezers then! It had to be home made using salt and Ice saved (from the winter frosts) in Ice houses. Onlt the great houses had these facilities.
