Piggy, Samneric, and Ralph lie about Simon's death because they are afraid of taking responsibility for their part in the violent mob that killed him. They are overwhelmed by guilt and fear of being held accountable for their actions. Denying the truth allows them to distance themselves from the horrific event.
Simon suggested it because, in his own words, "What else is there to do?" Simon could not bring himself to believe in the existence of a winged creature with teeth and claws that was unable to catch Samneric. To Simon the whole story made no sense and the only sensible option was to go to the mountain and discover just exactly what it was that Samneric had really seen.

Piggy and Simon are both killed
Simon was killed by Rob in the novel "Shattering Glass" by Gail Giles. Rob murders Simon in a moment of rage and jealousy after feeling betrayed by Simon.
When Simon discovers that 'the beast' which Samneric had seen on the mounatin top is simply the dead body of an airman he untangles the parachute lines which have caused the body to move like a puppet when the wind blows.
