It is believed that tortoises have eyes that are very sensitive to color, thus enabling them to find the right foods in the wild. The other day, I went to sit in the yard with our resident tortoise. I sat cross-legged about 5' from where he was eating his greens. He stopped munching and wandered over to me. He bumped his beak against my bright red toe nail, decided it wouldn't be tasty and headed back to his dish of greens. I'm no scientist, but my little informal 'observe and report' scient experiment would tend to support that the desert tortoise does in fact see colors ... red, at the very least.
