In a 'fix', I used grits to substitute the cornmeal, and it took a little doing but the end result, WAS GREAT! I used the 'real' way to prepare and season the fish for receiving the coating. I waited about 15 minutes then dropped them in my fryer, and presto, the we golden and tasty! I tried that same scenario to bake the fish, using Canola oil spray and after a few tempurature tries, the result was the same! Tasty fish, ready for plate or poorboy!
