An egg is a biological structure intended for reproduction. It protects and provides a complete diet for the developing embryo, and serves as the principal source of food for the first few days of a chick's life.

The yolk is centered in the albumen (white part) surrounded by the colorless vitelline membrane. On opposite sides of the yolk are two, twisted, whitish cord-like objects known as chalazae. Their function is to support the yolk in the very center of the albumen. Chalaza varies in size and density, the fresher the egg the more obvious the chalaza but it does not affect either cooking or nutritional value. The germinal disc, where fertilization takes place, is attached to the yolk and is not usually detectable by the human eye it is so small. A largest portion of the albumen, closest to the yolk is thick , the outer edge is thin. Surrounding the albumen are two shell membranes. The inner and outer membranes and then the shell itself. The shell contains several thousand pores that permit the egg to "breathe." White and brown eggs are white on the inside however the Araucana egg shows its distinctive color both inside and out.

An average-sized egg weighs approximately 57 grams or 2 ounces. Of this total weight, the shell constitutes 11 percent; the white, 58 percent; and the yolk, 31 percent. Normally, these proportions do not vary appreciably for either small or large eggs.
