Firstly rats do not gnaw, their teeth is set in such a position that they grind them against one another to keep them in check.
(they do however chew, especially fabric, which is in order to collect bedding material)
Secondly, rats ARE known for being etremely loving animals. They are intelligent, caring and sensitive. As anyone who has ever owned, or met a pet rat will know.
My advice for taming a biter would begin with lots of patience.
Don't pick your rat up from inside the cage, allow it to come out itself and then pick it up. If it only bites when you pick it up inside the cage, it means you've got quite a territorial rat. All you need to do in this case is the same as above, only pick it up when it has left the cage.
However with time, you may be able to pick it up by allowing the rat to sniff your hand before attempting to pick it up. Rats are a prey animal, suddenly picking them up is very threatening to them.
Always scoop your rat with two hands, it is very uncomfortable for them to just be lifted into the air.
You can also avoid hand contact. Gain trust and contact by allowing the rat to crawl on you and move through your clothes, keeping hand contact to a minimum, and slowly, over a few days build to a short stroke etc. That should help any rat that had learned the biting behaviour.
Rats are very clever animals, and most biters can be tamed.
Always remember that rats, like most animals, learn through a reward scheme. If your rat is friendly, give it a nice food treat, and reinforce the good behaviour.
A rat will never learn through punishment. If a rat does bite you, stay calm and quiet, and gently lower it back into it's cage.
Throwing it down and making a loud noise will enforce the behaviour.
