One way to hold a chicken is to tuck your right ring and index finger between their legs so that your palm is touching their chest, while with the remaining free fingers(the pinky and pointer finger)pinching the chicken's legs.
Then, rest your left hand(depending on whether the chicken is docile or excited, you might have to squeeze their wings to their sides)on their back to keep their wings from flapping. Then you tuck the chicken to your stomach, because they feel more secure that way. If your chicken is very well trained you can hold you chicken out in front of you without the use of your left hand.

You can not "own" a chicken in minecraft. If you hold wheat in your hand the chicken will follow you but it will never belong to you. You could always build a pen to lock chickens in. From there you can help them reproduce by feeding them wheat.
You need to start holding your chicks ASAP and it won't be a problem. If your chicken is older you need to handle them frequently
