What you see when you crack open an egg is Yolk and albumen, the white and the yellow. This is actually the food for the developing chick when the egg is fertilized and incubated. The chick uses this food for the 21 days it takes to develop. It gets nutrients from the yolk. If you have ever studied the development of an egg you will see what happens. The chick has this little pointy white thing on its beak called an egg tooth. Using this, the chick is able to break the eggshell and escape. This usually takes a couple hours, as the chick is very tired after the initial break (too tired to climb out) and takes a few-hour rest inside the egg.

Unlike other animals, baby chicks can actually begin to breathe before they begin to pip (make first hole before zipping). This is because there is acutally an air sack in the top of the egg. Right before the chick hatches, the chick moves so that its head is in the air sack and it can breathe. This is why many people hear 'peeping' before any chicks even hatch! Also, as the chick developes it takes nutrients from the yolk, the yellow part inside the egg. Before the chick moves into hatching postition, it doesnt breath and receives all nutrients from the yolk.
