Some species,such as the Thomson's Gazzelle, have evolved around speed, namely, escaping cheetahs. These, and many other of the medium to small sized prey would overpopulate and need culling. The overpopulation of these species may result in over grazing and over browsing, destroying much of the habitat.
Not much if any in regards to the north American Pronghorn. I live in Pronghorn country and the fastest I have seen are in full flight response at around 70mph. So they would be close. I don't think a Cheetah would have any chance of catching a healthy one.

The Atlas bear was North Africa's only native bear that survived into modern times, but is now considered to be extinct. As the cheetah is found further south, I doubt they would have ever met. Though the cheetah is a carnivore, an animal as big and powerful as a bear would be too much for the rather lightweight cheetah to tackle.
Well, they are not extinct yet but they are very much endangered. If they would go extinct, it would be from poachers hunting them for their pelt.

The cheetah's long tail helps to balance and stabilize the cheetah when it runs. Without the long tail, it would be much harder to make sharp turns at such high speeds.
