Chickens will start to lay at about 4 to 6 month old. They reach peak production at about 18 months and production drops from there until they are about 3 years old. This is very general and varies with different breeds. I have a hen still producing at 4 years old.

Well honey, it all depends on the size of those wings. On average, you can expect about 80-100 chicken wings in a 40-pound case. But hey, don't hold me to it, those chickens can be sneaky little things!

99% of farmers do not worry about the age of the birds, what matters is the weight. Poorly fed/ light birds can be as old as four months or more before reaching desired weight and meat to fat ratio. Well fed birds can often be culled at about 2 months old or once they reach about 6 to 8 lbs unless specifically required as "Cornish" or "poussin" in which case they are often 28 days old and 1.5 to 2 lbs.
