Rats can eat a variety of things such as their rat food(of course), grapes, carrots, lettuce ( mine LOVE lettuce), etc. I don't know this for a fact, but I can't imagine too much sodium being good for their diet, so I don't give them anything salty. I also read somewhere that you can occasionaly give them a chocolate chip.

Edit: Beware - it could! Rats can choke on peanut butter and do not possess the ability to regurgitate it sufficiently, thus it will likely kill them if they choke on it. To prevent this,
- Do the safe thing and don't give it to them, or
- Smear it on a dish or other feeding surface so they don't ingest so much at once as to choke on it, or
- Put a little on your finger for them to lick off or on a bit of cracker, or
- Water it down to the point that it is not sticky.
Whatever you do, don't give it to them in a lump - that's when they're likely to choke on it, usually because they want to carry it away to a stashing place and it gets stuck in their mouths.
The other thing to consider is that the fat content in peanut butter is high, so don't give it or not too often for that reason, as well, or you could have one fat rat on your hands.
