The huhu is a species of beetle. It is the largest unique beetle found in New Zealand and is a member of the longhorn beetle family called Cerambycidae. Its larvae are a whitish colour and grow to about 70mm long. They are quite edible and, although opinions differ, they are said to taste like buttery chicken. They are more commonly called Haircutter beetles, due to their long legs and antenna covered with sharp hooks. This causes the beetle to become tangled in a persons hair if they get to close and the only way to extract the beetle is cutting is free, hence the name "Haircutter". These beetles are most active at night and came often be seen flying into closed windows, making a loud thud. It is thought that they are attracted by the lights of the dwelling, much like a moth.
