Once in a while a hen that really should have lain her egg the day before doesn't and holds it till the next day, mean time there is the egg that should be lain later that day developing in the chute. So with this backup of eggs in the body the hen will lay the yesterday egg fully developed and also lay a partially finished egg at the same time. the partially finished egg usually is the yolk and whites with the tough outer membrane but no shell or only a little bit of shell deposit.

If the hen does not lay the partial egg at that time( usually first thing in the morning) she may be able to lay it late in the afternoon, waiting that extra bit of time will allow the shell to be completed, so no shell less egg.
