They tend to be off-white where as chicken eggs are white, green, blue, and brown. In baking and cooking, duck eggs are a better consistency and lead to a superior product. Cakes will have a richer texture and retain moisture better. When eating them straight, such as scrambled, duck eggs have a stronger flavor which some people that are used to chicken eggs may not care for.
