Horses are prey animals and therefore have a very good sense of smell. Also if you look at a horses head they have large nasal cavity in comparison to ours. They use smell to tell one another apart, to smell for predators, stallions smell a mares urine to tell f she is in heat and so on.

They walk up and smell you and then rest thoer head on your shoulder. They also won't try to buck you of as often as a horse that does not like you.
It depends on your opinion of what stinks, after awhile most horse people don't even notice the smell. Also, most barns smell different and have horses that smell different, believe it or not.
