To maintain health humans require certain chemicals called amino acids which are the building blocks of proteins. Some amino acids can be synthesised in our body but there are nine types of amino acid that we cannot synthesis and therefore they must be present in our diet. These are called the essential amino acids. Only animal derived foods have all nine essential amino acids. Different vegetable derived foods have some of the nine but none have all of the nine. It is therefore important for vegans to eat many types of vegetable foods to get all nine. Vegetarians who eat dairy products and/or eggs and/or fish do not have this problem as these foods are animal derived and do have all nine essential amino acids.
