Nut-crazy. There is no word for someone who only eats nuts, because only eating nuts does not supply you with the necsisary nutrients in order to survive/thrive.

If the gallbladder has been removed then the consumption of nuts needs to be kept at a minimum on account of the amount of fat the nuts contain. A person can eat nuts without a gallbladder but only in moderation.
