Plants are the basis of all living things. Animals like humans and cows, as well as bacteria need plants to live. Plants are near the bottom of the food chain, lower ranked animals use plants to obtain their nutrients, and higher ranked organisms use those organisms to obtain nutrients, and so forth. Even those at the top of the food chain (apex-predators) sometimes obtain nutrients directly from plants. Bacteria need to go through nitrogen fixation.

Also, plants provide oxygen, which many organism need to live; without it, many species would perish and die at an alarming rate.

So basically, Earth would go back to its simplest form, where only the slightest of organisms existed.
