A Holstein cow is a female bovine of the Holstein breed. This breed of cow was developed in the UK then imported into the US. Over the past few centuries the breed has been selectively bred for characteristics that improve milk quality and volume. The breed is one of the tallest for cattle, with females standing up to 6 feet tall at the shoulders and males able to stand over 8 feet tall. The females have well-developed udders with relatively small teats and at the peak of lactation can produce over 100 gallons of milk 2-3 times a day.
