There are a couple of reasons , The wire mesh separates the area where the eggs are, from the area where the water for humidifying the incubator goes. In many store bought incubators, under the wire mess are channels that contain water and can be refilled quickly without disturbing the whole setup. Another reason is to allow fluids and droppings to fall down to the floor of the incubator and keep them away from the new hatchlings. Absolutely the most important reason is to prevent SPRADDLE LEGS.

This problem occurs in day old chicks and is 100% preventable. If the new chick fresh out of the shell cannot get a proper footing in its new environment, spraddle leg will occur. Smooth surfaces are not good for learning to walk in the chicken environment. A chicks legs will not develop correctly. The WIRE MESH gives them something to stop the feet from sliding sideways. Not all chicks will develop this but it is very sad to lose a chick because of this. It takes a lot of corrective action to fix it and it does not always work, the chick will die.

A thermostat and hygrometer are essential for successful hatching. Venting the incubator will help control excessive humidity but be careful not to drop the temperature drastically.
