Unless the horse is pinning its ears, he/she is probaly just playing around. They probably just want the attention that the other horse(s) give them when they do playfully. To stop the biting, try a horse muzzler, sometimes called a grass stopper. They are comonly used on trail rides so that horses to not bend down to eat grass.
