I have a litter of my own, i am still trying to research this topic too. But I have found that you should check if the mother is socialized and if she is taking good care of the babies. when she gets up to eat or drink I would take her out and put her in another cage where she cannot see what you are doing. I would wait until the babies have hair before you touch them otherwise the mother could eat or neglect them. But some sources say that you should hold them as soon as possible. Hold them for a little bit at a time. I don't think there is a real specific age that you should start, just figure out if the mother will trust you enough to let you handle them.
most people say wait three days but with my mice i thought that, that was a bit short the mother bits me if i put my hand in and the baby's havn't been out.
it really depends on the mum, if she is still really friendly then sure hold them, otherwise wait a little longer till the mum is nicer or even when they comes out themselfs
