I'd say 1 month. I did have baby hamsters. You can start picking them up when they have fur and can open their eyes.
But you have to make sure that you do NOT put boys and girls together. They will fight and possibly kill each other. You can tell if they are Female or Male by just gently picking them up by the scruff of the neck and looking on their stomach. Boys have two holes by their back legs they are in the middle and far apart. Girls are the same except their holes are close together.
