Cornish Game "hens" (they are not allways hens-- just a small chicken) are usually fed for 3-4 weeks, broilers 7-9 weeks, roasters 8-12 weeks. Birds can be consumed right after they are killed, cleaned and cooked.
Any chicken that is active and healthy can be considered for the stew pot.
A sick hen, showing signs of illness or already dead should not be consumed.
It is probably not safe to eat chicken strips that have sat out overnight. Chicken can go bad after cooking quite rapidly if in a warm environment.
