In all my years of solitary hiking I wondered that question many times. From my personal observations, birds usually wake up when the overnight temperature changes and stops dropping and begins to warm. If you don't hear the birds in the morning, its as warm as its going to get today, bundle up.
There quite a few species of birds that sing in the evening. Mockingbirds, owls, whipporwhills, night herons, night larks, and blue jays all sing during the night.
Depends on where you live and the birds in your area. I had a mockingbird every morning that sounded like a car alarm in a tree in my backyard.
