Well, I am guessing that they sleep curled up because it keeps them warm. Also, it may be very comfortable sleeping like that. Imagine cats sleeping all spread apart! Not very comforting to me!
Instinct is part of the reason a dog curls up when they sleep. In the wild, dogs sleep curled up to conserve heat and protect their abdomen.

This is typical behavior for a cat. If you have watched a group of cats taking a nap all of them are head to tail and curled up together. They get a sense of comfort and as their "human" you are part of it.
