It's a hobby, mostly.. Just like people collect stamps, or old warmemorabilia. Theres no real rhyme or reason, its just a hobby.
The way I see it, why let something intricate and beautiful waste away in the woods, when i can bring it home and take care of it, hang it on my wall or decorate it around my home. At least then, the animal will never be forgotten, and will be cherished for the rest of its after-life.

Note that you can't collect the skulls on the Easy difficulty it has to be on Normal difficulty or higher and also note that I have found all 13 skulls and Bungie put them in Bizarre places I'd recommend going to the related link to find them especially the I Would've Been Your Daddy(IWBYD) skull it's the hardest to get.
