They do, although usually you have to hide the vegetables, by mixing them into the food, to get the cat to eat them. High-quality cat foods usually have small amounts of vegetables mixed into them. Cats don't really need vegetables to live, but since vegetables are high in fiber, a small amount of them can help keep them from getting constipated. In fact, many outdoors cats eat grass occasionally, for this very reason.

Cats are strictly carnivores (meat eaters). Since their bodies are designed to survive on meat, usually the only foods cats like are made from animals: meat, eggs, and dairy products. God/nature made them love meat, so they would be more inclined to eat it. For example, if a cat hated meat, and only liked vegetables, then it would only eat vegetables, and not meat. And then it would die, because it cannot survive on vegetables. So, since cats' bodies need meat to survive, God/nature made them love meat, so they would eagerly and enthusiastically eat it.

Dogs, on the other hand, are omnivores, just like humans. They eat both animal products and plants/vegetables, and they can survive on a vegetarian diet. So, since dogs' bodies are designed to eat both meat and vegetables, God/nature made them like both meat and vegetables, so they will want to eat both.
