Because he is unhealthy.

That's only if its like rock hard.

Rabbit poop is supposed to be hard. If it's watery, that means the rabbit has diarreah, which means you need to take him/her to the vet immediatly, because then they can die within a few days or sooner.

As long as it is firm and round and brown you are good. If it becomes soft and watery or black and hard you need to go to a vet or rabbit breeder with some knowledge.
