This would have been done mostly if they were travelling to an unknown place. Horses would provide transport and food, where as slaves would have needed food which would have taken up more cargo room. Horses can forage for food in most anyplace and if they became lame or injured could be killed for food, leather, and other provisions.
Any herding dog will do it if they're trained. Corgis were bred to be so small for herding cows so if they kicked the hoof would go over the dog rather than hitting it, so it would probably be useful for horses as well.

No, I would recommend something a lot quieter. TBs are generally considered to be rather high strung...I would suggest a stock horse or a small riding pony.
Obviously that would be someone who liked horses or had a painting commissioned of one of their own horses.
In a natural setting, no animal would live in a stable. And if an animal had a choice, they would choose to live in a shed or out in the open rather than a stable. But in a domestic farm setting, horses and dairy cows are the ones that live in a stable.

There are no "dressage horses" but some breeds are used for dressage more than others,, e.g. you would probably use a warmblood rather than a cob. But basically, a dressage horse is a horse that does dressage :)
