Like people who knows why our pets suddenly do something strange. Use vinegar and warm water and spray onto the carpet to neutralize the odor. Then stand ready with a clean spray bottle of cold water and if you can catch her pooping on that same spot give her a shot of water and that should stop her from doing this. Also pick up the poop and put it in her litter box, then carry her over to it and say 'good girl.' Cats are more intelligent than some people give them credit for.

What also is true is that Cats are smart enough that they'll wait until you look away and do it right there. Sometimes it's just impossible to camp for the cat in the same spot even for 24/7 housekeeper.

There's a product that kind of lets out pressurized air with a motion censor. I can't really remember what it's called at the moment. But you could try placing that thing right there so if the cat gets close by, it'll be ambushed by it. It doesn't squirt water or anything. Just pressurized air or something, and it feels like squirted water only because it's sprayed on the pet. Not harmful to your pet. ^_^ But it's a little pricey...

I seriously considered getting that product and place it right next to the stove, because my cats somehow learned to get up on the kitchen counter and walk right over to the stove area since it's "warm" during winter times... But shortly after I had to move and in this home the cats can't reach it. So I didn't buy it (so i can't remember the name)
