A term referring to dishes prepared in the style of provence, a region in southeastern France. Garlic, tomatoes and olive oil are the major trademark of Provençal cooking. Onions, olives, mushrooms, anchovies and eggplant also play a prominent part in many of these dishes.
It is a type of French salad. It includes tomatoes, anchovies, black olives, green beans, canned tuna, and hard boiled eggs. Interestingly, some restaurants will used grilled fresh tuna to make it "classier", but this isn't the real recipe.

Pie saladière (or pissaladiere) is a French version of a pizza piled with onions, anchovies, and olives. Instead of a normal pizza crust, it is made on a puff pastry.
