Most animals who can fly eliminate waste whenever they feel the need to do so. If they are on the ground, they eliminate their waste where they are sitting-- in a yard, in the forest, etc. If they are flying, they eliminate it while they are in flight: you may have had a pigeon or a seagull mess on your car's windshield, for example. So, yes, a goose could certainly do this too.
It is my understanding that these large birds defecate upon take-off. This is to make their bodies as light as possible in the air. So i guess it does poop while flying. who knew? haha
