Usually you cut a hole on the other side of the wall behind the shower. Very often this is in a closet. If not, you can use the piece of sheetrock to make a door or put it back in place and retape the joints.

Its caused by dampness. The only solution to this is to strip your shower completely, tiles and old waterproofing (if any) and re-waterproof the shower and retile. I also recommend changing the shower trap and waste pipes along with the shower water pipes if one can afford to do so. Rather do the job once properly.
To remove old shower pipes to install a new shower faucet, turn the main water off first. Then either cut the pipes at the joints or unscrew the washers holding the pipes together.
Water source+ pipes + pump = active shower.
PVC pipes are less expensive and easier to repair. Metal pipes are more expensive and more difficult to repair.

A person who repairs pipes would be a plumber. I have never heard of any person who specifically repairs tape.
You have air in the system you need to bleed it out. do you have a really old heater/ boiler. hot water heater need more info
