We bought a new 2006 Navigator with a center console in the 2nd row of seats, but we wanted seating for 8. At our request, the dealer had the console removed and replaced with a separate seat that sits between the 2 that were originally in the vehicle. This separate center seat folds down, with a little more effort than the two original seats in row 2. Looking at it, you'd never know it was changed out after we bought the vehicle.
Don't know how much work it would take to do this, but it definitely can be done. Hope this helps.
