If the belt (probably just the non-air conditioning equipped size) can be installed without it touching the air conditioner pulley, then yes, it will work fine. The short belt will use the same routing as the long, just omit the a/c pulley.
No. The timing belt or chain connects to crankshaft and camshafts. The serpentine belt connects the crankshaft with the alternator, ac compressor, power steering, etc.
Likely either the serpentine belt is squealing due to age and the extra stress put on it when the a/c compressor is activated, or the a/c compressor or it's pulley are failing.
You have to use the same belt and install a dummy pulley kit in place of the ac compressor.

You can't bypass with a belt alone. You have to by a bypass pulley kit. The new pulley takes the place of the ac compressor and you use the same size belt.
