You can freeze leeks if you would like but it is not the best idea. This is because it will retain a lot of moisture just like most products do when they are in the freezer. As a result, your leeks will be more mushier than if not frozen. However, if you are going to use them in a liquid based product such as a soup, a smoothie or to make a sauce then go right ahead.

If you decide to freeze your leeks the best thing to do is to cut them up in equal pieces and place them in an air tight container or air tight bag. Upon using the leeks for your meal, place them directly into the food you are cooking, DO NOT THAW.

This can prevent a slightly bitter product, as i have done it myself and learned from my mistake.

Remember that keeping foods in the freezer does not prevent spoilage and bacteria from growing it just slows it down. So, to prevent spoilage use your frozen leeks within 3 months.

If you would like, blanch your leeks for about 2-3 minutes, however you might loose some of the texture and flavour.
