Yes, growing up, Elizabeth would have seen her uncle who was then the prince of wales at numerous family events as well as his future wife, Wallis Simpson who refereed to her as Shirley Temple. Following Edward's abdication from the throne in 1936 when Elizabeth was 10, his relationship with the rest of the royal family became strained and spent most of the remainder of his life in Paris. Despite this, Edward did return to London in 1952 for the funeral of his brother, King George VI at which he would have undoubtedly encountered Elizabeth. He also visited London in 1965 where he met with Queen Elizabeth II and his sister Mary. Shortly before his death in 1972, the queen, her husband Prince Phillip, and her son Prince Charles visited Edward at his home in Paris. I'm sure that their may have been a couple of other occasions when Elizabeth would have seen her uncle during the later part of his life.

Was it expected that Princess Elizabeth II would take the throne?

Not until her uncle, Edward VIII, became king in 1936. After that, her chances were better than average. After Edward abdicated British monarchy at the end of 1936, Princess Elizabeth became second in line to the throne behind her father, King George VI. If Edward had never abdicated and died childless in 1972, Elizabeth might have become queen at the age of 46.
