Jelly can spoil. It can grow mold. If it does, throw it out. If it hasn't been processed or sealed properly or the sugar content is low, it can ferment. Throw out fermented jelly, too.

The best way to store unopened jelly is in a cool, dark, dry area. After opening, store it in the refrigerator.
