This is a fair question, given that animals cannot tell us whether they see objects in colour or not.
The way that scientists can determine whether or not an animal has colour vision is via the "cones" in their eyes. Animals and people have both "rods" and "cones". Rods assist in seeing in the dark; cones assist with colour vision. Quite simply, scientists can determine how well an animal sees colour by working out the ratio of rods to cones in their eyes.
They also analyse the type of cones themselves: there are three types of cones which are responsible for colour vision, and each one has a separate pigment which is sensitive to red, blue or green light.
