Most people back then used the sun for their time-telling. Also, they had something called a sun dial, and it was a stick that cast a shadow on a certain board that they made up. Depending on what the shadow touches tells what time it was.
The Pioneers could estimate the time by looking at the sun and where it is positioned
More detail:
Some had clocks and pocket watches, but those who didn't, were able to tell time by the sun. When the sun is straight overhead, then it's noon, or very close to it. So if the sun was about half-way between sun up and noon, then they knew it was around 10:00 a.m. Likewise, when the sun was about half-way between noon and sundown, they knew it was mid afternoon.
It's actually easy to tell time by the sun, you just have to pay attention to the position of it, and learn where it is in relation to the time, depending on the time of year.
