Wholesale producers from all across the United States and the world grow, pick, sort and package their products. From lettuce, tomatoes, and onions, to beef, pork and eggs and even bread, chips and other snack food items.

Then they take those products and sell them to one of the grocery stores or national chains who send large semi-trucks to pick up the products. They are then shipped either across the country on those trucks or are taken to docks where they then get loaded onto ships and sent across the oceans.

Eventually they end up in your local grocery stores "back room" where they will unpack them and load them into the displays at your market. Where you show up and bring it to your house to make something tasty. Hopefully if your lucky, it was only on the road for a 2 - 3 weeks, if you're not lucky it's probably been on the road for a month or more.

The next time you buy a piece of fruit, bag of Doritos, or that slab of bacon flip it around till you can find out where it came from. Chances are that it's a lot farther away than you realize. I encourage all environmentally minded people to please buy locally if they can, the carbon footprint created by shipping products around the world is huge!

In the United States, market beef cows are taken from the feedlot or finishing farm directly to a slaughterhouse, where the animal is killed, dressed out (guts and inedible tissues removed), and usually at least cut into quarters. From there, the beef is either further processed into retail cuts or sent to a different processing plant that will further cut the beef into recognizable cuts like porterhouse or sirloin. From there the beef may be stored in a cold storage warehouse or taken directly to a distribution center where the beef is parceled out for transport to the supermarket.

Beef cattle first get killed via bullet or cap-bolt to the brain. They are then strung up by their hind legs, stuck (throats cut) and allowed to bleed out while they are skinned. Skinning is done from the top down from the belly out to the back. During the skinning process the legs at the knees (forelegs) and the hocks (back legs), tail, and head are removed, as well as the testicles if the animal being slaughtered is a bull. A gam hook is inserted through the space between the hock joint and the gam cord so that the hind legs can more easily be removed. Then the viscera (i.e., the guts including heart, lungs, stomach, intestines, etc.) are removed, from the top (anus cut out and tied off) to the bottom (esophagus tied then cut). Kidneys are removed last. After the incapacitation, sticking, skinning, gutting/cleaning and removal of limbs tail and head, the carcass is washed with cold water, split in half (spinal cord removed) and put in the cooler for as long as necessary.

After being in the cooler the carcass is cut into quarters, then cut according to the cuts of meat that are needed by the customer. Some parts of the animal, like the tongue, heart, kidneys and liver are kept. Parts and cuts of meat are packaged up and ready for sale.
